Sweet & Spicy Grilled Salmon

Ingredients:
- 2 Tbsp of Siracha
- 1 Tbsp of dark brown sugar
- A dash of maple syrup
- 1 tsp of paprika
- A dash of cayenne pepper
- 2 Tbsp mayonnaise
- 1 1/2 Tbsp finely chopped chives
- 9 thinly sliced celery stalks
- 1/2 a thinly sliced red onion
- 4 x 6 ounce skin-on salmon fillets
- Sea salt and pepper
- olive oil
- Preheat grill on medium high

Mix together the hot sauce, brown sugar, maple syrup, paprika and cayenne in a small bowl

Transfer 1 tablespoon of the mixture to a large bowl and whisk in the mayonnaise; set aside the rest of the sauce

Add the chives, celery and onions to the bowl with the mayonnaise and toss well
- Sprinkle salt and pepper on the Wild Salmon Fillets
- Lightly cover the grill grate with olive oil (To stop from sticking)
- Place the Wild Salmon Fillets on the grill skin up and cook until grill marks appear – about 2-3 mins
- Turn the fillets and brush them with the sauce that has been set aside
- Keep cooking the fillets while continually brushing the sauce over them until they are glazed and cooked through
- Plate and serve with the celery and onions
