Sweet & Spicy Grilled Salmon

Ingredients:

  • 2 Tbsp of Siracha
  • 1 Tbsp of dark brown sugar
  • A dash of maple syrup
  • 1 tsp of paprika
  • A dash of cayenne pepper
  • 2 Tbsp mayonnaise
  • 1 1/2 Tbsp finely chopped chives
  • 9 thinly sliced celery stalks
  • 1/2 a thinly sliced red onion
  • 4 x 6-ounce skin-on salmon fillets
  • Sea salt and pepper
  • olive oil

Directions:

  1. Preheat grill on medium high
  2. Mix together the hot sauce, brown sugar, maple syrup, paprika and cayenne in a small bowl
  3. Transfer 1 tablespoon of the mixture to a large bowl and whisk in the mayonnaise; set aside the rest of the sauce
  4. Add the chives, celery and onions to the bowl with the mayonnaise and toss well
  5. Sprinkle salt and pepper on the Wild Salmon Fillets
  6. Lightly cover the grill grate with olive oil (To stop from sticking)
  7. Place the Wild Salmon Fillets on the grill skin up and cook until grill marks appear – about 2-3 mins
  8. Turn the fillets and brush them with the sauce that has been set aside
  9. Keep cooking the fillets while continually brushing the sauce over them until they are glazed and cooked through
  10. Plate and serve with the celery and onions

**We recommend using a thermometer to gauge the ideal inner heat of the fish which is right around 135’F** Serves 4
