Salmon Skewers with Leeks and Sesame

Ingredients
● 2 wild salmon fillets, cut into cubes (about 6 oz each)
● 1 large leek, sliced into 1-inch pieces
● 1 tbsp sesame oil
● 1 tbsp tamari or soy sauce
● Sesame seeds and chopped scallions (garnish)
Instructions
- Soak wooden skewers in cold water for at least 10 minutes to prevent burning.
- In a bowl, toss the salmon cubes and leek pieces with sesame oil, tamari, and black pepper. Thread them alternately onto the skewers.
- Heat a grill pan or broiler. Place skewers on the hot surface and cook for 4–5 minutes per side, turning once, until the salmon is opaque and lightly charred.
- Sprinkle with sesame seeds and chopped scallions before serving.
