Salmon Skewers with Leeks and Sesame

Cook Time: 10 minutes

Yields: 2 servings (4 skewers) 

Ingredients

● 2 wild salmon fillets, cut into cubes (about 6 oz each)

● 1 large leek, sliced into 1-inch pieces

● 1 tbsp sesame oil

● 1 tbsp tamari or soy sauce

● Sesame seeds and chopped scallions (garnish) 

Instructions

  1. Soak wooden skewers in cold water for at least 10 minutes to prevent burning.
  2. In a bowl, toss the salmon cubes and leek pieces with sesame oil, tamari, and black pepper. Thread them alternately onto the skewers.
  3. Heat a grill pan or broiler. Place skewers on the hot surface and cook for 4–5 minutes per side, turning once, until the salmon is opaque and lightly charred.
  4. Sprinkle with sesame seeds and chopped scallions before serving.
