Mustard-Glazed Salmon with Baby Potatoes

Yields: 2 servings 

Ingredients

● 2 salmon fillets (about 6 oz each)

● 10 baby potatoes, halved

● 2 tbsp grainy mustard

● 1 tbsp maple syrup

● 1 tbsp olive oil

● 1 tsp balsamic vinegar

● 1/4 tsp salt

● 1/8 tsp black pepper 

Instructions

  1. Preheat the oven to 400°F (200°C). Toss the halved baby potatoes in a bowl with olive oil, salt, and pepper. Spread them out on a parchment-lined baking sheet and roast for 15 minutes.
  2. While the potatoes cook, whisk together the mustard, maple syrup, and balsamic vinegar in a small bowl.
  3. After 15 minutes, remove the tray, make space for the salmon fillets, and place them skin-side down. Brush each fillet generously with the mustard glaze.
  4. Return the tray to the oven and roast for an additional 10 minutes, or until the salmon is cooked through and the potatoes are golden brown.
