Mustard-Glazed Salmon with Baby Potatoes

Ingredients
● 2 salmon fillets (about 6 oz each)
● 10 baby potatoes, halved
● 2 tbsp grainy mustard
● 1 tbsp maple syrup
● 1 tbsp olive oil
● 1 tsp balsamic vinegar
● 1/4 tsp salt
● 1/8 tsp black pepper
Instructions
- Preheat the oven to 400°F (200°C). Toss the halved baby potatoes in a bowl with olive oil, salt, and pepper. Spread them out on a parchment-lined baking sheet and roast for 15 minutes.
- While the potatoes cook, whisk together the mustard, maple syrup, and balsamic vinegar in a small bowl.
- After 15 minutes, remove the tray, make space for the salmon fillets, and place them skin-side down. Brush each fillet generously with the mustard glaze.
- Return the tray to the oven and roast for an additional 10 minutes, or until the salmon is cooked through and the potatoes are golden brown.
