Herbed Salmon with Roasted Cauliflower and Fennel

Ingredients
● 2 salmon fillets (about 6 oz each)
● 1/2 head cauliflower, sliced into rounds
● 1/2 bulb fennel, thinly sliced
● 1 tbsp olive oil
● 1 tsp Italian herbs
● 1/4 tsp sea salt
● 1/8 tsp black pepper
● Fresh fennel fronds (for garnish)
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, toss the cauliflower and fennel slices with olive oil, Italian herbs, salt, and pepper until evenly coated. Spread the vegetables in a single layer on the prepared baking sheet.
- Roast the vegetables for 15 minutes. Remove the tray, gently push the vegetables to the sides, and place the salmon fillets in the center. Season the salmon lightly with a pinch of salt and pepper.
- Return the salmon to the oven and roast for another 10–12 minutes, until it flakes easily with a fork and the vegetables are tender and slightly golden.
- Plate the salmon with the roasted vegetables and garnish with fresh fennel fronds.
