Herbed Salmon with Roasted Cauliflower and Fennel

Yields: 2 servings 

Ingredients

 ● 2 salmon fillets (about 6 oz each)

● 1/2 head cauliflower, sliced into rounds

● 1/2 bulb fennel, thinly sliced

● 1 tbsp olive oil

● 1 tsp Italian herbs

● 1/4 tsp sea salt

● 1/8 tsp black pepper

● Fresh fennel fronds (for garnish) 

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss the cauliflower and fennel slices with olive oil, Italian herbs, salt, and pepper until evenly coated. Spread the vegetables in a single layer on the prepared baking sheet.
  3. Roast the vegetables for 15 minutes. Remove the tray, gently push the vegetables to the sides, and place the salmon fillets in the center. Season the salmon lightly with a pinch of salt and pepper.
  4. Return the salmon to the oven and roast for another 10–12 minutes, until it flakes easily with a fork and the vegetables are tender and slightly golden.
  5. Plate the salmon with the roasted vegetables and garnish with fresh fennel fronds.
