Baked Mediterranean Salmon with Summer Veggies

Ingredients
● 2 salmon fillets (about 6 oz each)
● 1 zucchini, thinly sliced
● 1/2 red onion, sliced
● 1/2 cup cherry tomatoes
● 1/2 red bell pepper, chopped
● 2 tbsp olive oil
● 1 tsp dried oregano
● 1/4 tsp sea salt
● 1/8 tsp black pepper
● Lime wedges (for garnish)
Instructions
1. Preheat oven to 400°F (200°C). Line a baking tray with parchment paper.
2. Toss vegetables in a bowl with olive oil, oregano, salt, and pepper. Spread evenly on the tray.
3. Nestle salmon fillets among the vegetables and drizzle with any leftover seasoned oil.
4. Bake for 20 minutes, or until the salmon is fully cooked and vegetables are tender.
5. Serve with lime wedges.
