Salmon Poke Bowl with Avocado and Rice

Prep Time: 15 minutes 

Cook Time: 10 minutes

Yields: 2 servings 

Ingredients

● 1 cup sushi rice, cooked

● 6 oz sushi-grade salmon, cubed ● 1/2 avocado, sliced

● 1/2 cup shredded red cabbage

● 1/2 cup cucumber slices

● 1 tbsp tamari

● 1 tsp sesame oil

● 1 tsp rice vinegar

● Black and white sesame seeds (for garnish) 

Instructions

  1. In a bowl, combine cubed salmon with tamari, sesame oil, and rice vinegar. Let marinate in the fridge for 5–10 minutes.
  2. Arrange cooked rice in serving bowls. Top with marinated salmon, avocado, red cabbage, and cucumber.
  3. Garnish with sesame seeds and serve immediately.
