Baked Salmon Veggie Patties

Yields: 8 patties (4 servings) 

 

Ingredients

● 1 1/2 cups cooked wild salmon, flaked

● 1/2 cup almond flour or oat flour

● 1/4 cup red onion, finely chopped

● 1/4 cup parsley or cilantro, minced

● 1 egg

● 1 tbsp lemon juice

● 1 tsp Dijon mustard

● 1/2 tsp garlic powder

● 1/4 tsp sea salt

● 1/8 tsp black pepper

● 1 tbsp olive oil spray 

Instructions

  1. Preheat oven to 400°F (200°C) or air fryer to 375°F (180°C).
  2. Line a baking sheet or a basket with parchment paper.
  3. In a bowl, combine all ingredients and mix until uniform. Form into 8 patties.
  4. Place the patties on the tray and spray lightly with olive oil.
  5. Bake for 15–18 minutes or air fry for 10–12 minutes, flipping halfway through, until golden and set.
  6. Serve warm with your favorite dipping sauce or salad.
