Baked Salmon Veggie Patties

Yields: 8 patties (4 servings)
Ingredients
● 1 1/2 cups cooked wild salmon, flaked
● 1/2 cup almond flour or oat flour
● 1/4 cup red onion, finely chopped
● 1/4 cup parsley or cilantro, minced
● 1 egg
● 1 tbsp lemon juice
● 1 tsp Dijon mustard
● 1/2 tsp garlic powder
● 1/4 tsp sea salt
● 1/8 tsp black pepper
● 1 tbsp olive oil spray
Instructions
- Preheat oven to 400°F (200°C) or air fryer to 375°F (180°C).
- Line a baking sheet or a basket with parchment paper.
- In a bowl, combine all ingredients and mix until uniform. Form into 8 patties.
- Place the patties on the tray and spray lightly with olive oil.
- Bake for 15–18 minutes or air fry for 10–12 minutes, flipping halfway through, until golden and set.
- Serve warm with your favorite dipping sauce or salad.
