Lemon Herb Roasted Salmon Tray Bake

Ingredients
● 3 wild sockeye salmon fillets (about 6 oz each)
● 1 cup asparagus
● 1 cup cherry tomatoes
● 1 red onion, halved
● 4 garlic cloves
● 1 lemon, sliced
● 1 tbsp extra-virgin olive oil
● 1/4 tsp salt
● 1/8 tsp pepper
● Rosemary sprigs (optional)
Instructions
1. Preheat oven to 400°F (200°C) and line a baking tray with parchment paper.
2. Arrange salmon, asparagus, tomatoes, onion, and garlic evenly on the tray. Place lemon slices over the salmon.
3. Drizzle everything with olive oil, then season with salt and pepper. Add rosemary sprigs if using. Roast for 20 minutes, or until salmon flakes easily and vegetables are tender.
