Salmon Pesto Pasta with Fresh Herbs

Cook Time: 12 minutes

Yields: 2 servings 

Ingredients

● 2 wild salmon fillets, cooked and flaked (about 6 oz each)

● 6 oz whole-wheat pasta

● 2 tbsp pesto

● 1 tbsp extra-virgin olive oil

● 1 tbsp chopped parsley

● 1/4 tsp salt

● 1/8 tsp pepper 

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions (about 10–12 minutes). Drain well and return to the pot.
  2. While the pasta is still hot, stir in the pesto, olive oil, salt, and pepper until evenly coated.
  3. Gently fold in the flaked salmon.
  4. Divide between two plates and garnish with fresh parsley
