Salmon Pesto Pasta with Fresh Herbs

Ingredients
● 2 wild salmon fillets, cooked and flaked (about 6 oz each)
● 6 oz whole-wheat pasta
● 2 tbsp pesto
● 1 tbsp extra-virgin olive oil
● 1 tbsp chopped parsley
● 1/4 tsp salt
● 1/8 tsp pepper
Instructions
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions (about 10–12 minutes). Drain well and return to the pot.
- While the pasta is still hot, stir in the pesto, olive oil, salt, and pepper until evenly coated.
- Gently fold in the flaked salmon.
- Divide between two plates and garnish with fresh parsley
