Grilled Alaskan Halibut over Garlicky Greens

Ingredients
● 2 Alaskan halibut fillets (about 6 oz each)
● 2 cups baby spinach
● 1 cup sliced leeks
● 1 garlic clove, minced
● 1 tbsp olive oil
● 1 tsp lemon juice
● 1/4 tsp salt
● Lemon wedge (garnish)
Instructions
- Preheat a grill or grill pan over medium heat. Season halibut fillets with salt and pepper and lightly brush with olive oil. Grill for 4–5 minutes per side until firm, opaque, and nicely seared.
- In a sauté pan, heat olive oil over medium heat. Add sliced leeks and cook for 2 minutes, until they are softened.
- Stir in the garlic and cook for an additional 30 seconds. Add the baby spinach and cook, stirring, until it has wilted, about 1–2 minutes.
- Stir in lemon juice, remove from heat, and plate the garlicky greens. Top with grilled halibut and garnish with lemon wedges.
