King Salmon on Sesame Sautéed Spinach

Yields: 2 servings
Ingredients:
● 2 King salmon fillets (about 6 oz each)
● 3 cups baby spinach
● 1 tbsp sesame oil
● 1 tsp sesame seeds
● 2 lemon slices
● 1/4 tsp salt
● 1/8 tsp pepper
Instructions:
- Season salmon with salt and pepper. Place in a hot grill pan or skillet over medium-high heat and cook for 4–5 minutes per side, until golden brown and cooked through.
- In a separate pan, heat sesame oil over medium heat. Add baby spinach and sauté for 2–3 minutes until wilted. Sprinkle in sesame seeds and stir to combine
- Divide spinach between two plates. Top with grilled salmon fillets and garnish each with a lemon slice
