King Salmon on Sesame Sautéed Spinach

Prep Time: 5 minutes

Cook Time: 10 minutes

Yields: 2 servings 

Ingredients:

● 2 King salmon fillets (about 6 oz each)

● 3 cups baby spinach

● 1 tbsp sesame oil

● 1 tsp sesame seeds

● 2 lemon slices

● 1/4 tsp salt

● 1/8 tsp pepper

 Instructions:

  1. Season salmon with salt and pepper. Place in a hot grill pan or skillet over medium-high heat and cook for 4–5 minutes per side, until golden brown and cooked through.
  2. In a separate pan, heat sesame oil over medium heat. Add baby spinach and sauté for 2–3 minutes until wilted. Sprinkle in sesame seeds and stir to combine
  3. Divide spinach between two plates. Top with grilled salmon fillets and garnish each with a lemon slice
