Salmon Tartare

Our wild Alaskan king salmon is sushi-grade, meaning that it’s perfectly safe to eat it raw, as in this recipe. It is recommended to serve the salmon within 10 minutes of mixing it with the lemon juice mixture.

 

Ingredients

     12 oz wild Alaskan king salmon, cut into ¼ inch dice

     1 tbsp capers, rinsed and finely chopped

     1 shallot, peeled and finely chopped

     1 lemon, zest and juice

     1 tbsp soy sauce

     3 tbsp extra virgin olive oil

     Salt and pepper

 

Directions

  1. Mix the salmon with the capers, shallot and lemon zest.
  2. In a separate bowl, mix half the lemon juice, soy sauce, and olive oil. Season to taste, adding more lemon juice as well as salt and pepper if necessary.
  3. Combine the two, tossing carefully so the salmon is well-coated in the dressing. Leave to marinate for 5 minutes, then serve, optionally with bread on the side.

 

Further notes

If you’re serving this as an appetizer for a dinner party, we suggest serving dark rye bread alongside.

 

If you want to serve the salmon tartare as finger food, little Russian blini pancakes, made from buckwheat, are a good base to put a teaspoon of the marinated salmon on top.
