Goldenberries have a sweet, tart, slightly citrussy flavor that pairs well with many ingredients, both sweet and savory. Here, we’re using it to make a twist on a classic Mexican condiment. Serve with grilled chicken or fish, or just as a dip to scoop up with tortilla chips.

 

Ingredients

     2 small red onions, peeled and thinly sliced

     1 jalapeño chili pepper, deseeded and minced (optional)

     2 limes, zest and juice

     1 lb fresh frozen organic goldenberries, quartered

     1 lb small cherry tomatoes, quartered

     1 bunch fresh cilantro, finely chopped

     Salt and pepper

 

Directions

  1. Add the onions and chili to a bowl and pour over the lime juice. Leave to pickle lightly for about 10 minutes.
  2. Add all the other ingredients, mix well and season to taste.

 

Further notes

Golden berries are also known as physalis, Inca berry and Cape gooseberries. They grow with a papery husk surrounding them, which is stripped away and discarded before eating.
