Pico de Gallo with Goldenberries

Goldenberries have a sweet, tart, slightly citrussy flavor that pairs well with many ingredients, both sweet and savory. Here, we’re using it to make a twist on a classic Mexican condiment. Serve with grilled chicken or fish, or just as a dip to scoop up with tortilla chips.
Ingredients
● 2 small red onions, peeled and thinly sliced
● 1 jalapeño chili pepper, deseeded and minced (optional)
● 2 limes, zest and juice
● 1 lb fresh frozen organic goldenberries, quartered
● 1 lb small cherry tomatoes, quartered
● 1 bunch fresh cilantro, finely chopped
● Salt and pepper
Directions
- Add the onions and chili to a bowl and pour over the lime juice. Leave to pickle lightly for about 10 minutes.
- Add all the other ingredients, mix well and season to taste.
Further notes
Golden berries are also known as physalis, Inca berry and Cape gooseberries. They grow with a papery husk surrounding them, which is stripped away and discarded before eating.
