Miso Black Cod

Product: Wild Alaskan Black Cod

Black cod with miso was popularized by high-end international restaurant chain Nobu. It’s easy to see why it made their name – it is a perfect balance of sweet and savory flavors.

 

Ingredients

     ⅓ cup sake

     ⅓ cup mirin

     ¼ cup white miso paste

     2 tbsp sugar

     1 tbsp soy sauce

     6 x 6 oz pieces of wild Alaskan black cod

     Steamed bok choy, to serve

 

Directions

  1. Heat the sake and mirin in a pan over medium heat. Boil for about 1 minute to burn off the alcohol. Add the miso paste, sugar and soy sauce and whisk until dissolved. Leave to cool.
  2. Coat the fish in the marinade and place in a container where they fit snugly. Marinate in the fridge for 2-3 days.
  3. When ready to eat, preheat your broiler. Place the marinated fish filets on a sheet of aluminum foil on a baking sheet.
  4. Broil for about 10 minutes, rotating the tray as necessary, until the fish is dark golden brown and flakes when gently pressed.
  5. Serve with steamed bok choy on the side.

 

Further notes

If you want the main dish to be more filling, add a side dish of simple steamed rice. Japanese sushi rice would be perfect.
