Miso Black Cod

Black cod with miso was popularized by high-end international restaurant chain Nobu. It’s easy to see why it made their name – it is a perfect balance of sweet and savory flavors.
Ingredients
- 6 x 6 oz pieces of wild Alaskan black cod
- ⅓ cup sake
- ⅓ cup mirin
- ¼ cup white miso paste
- 2 tbsp sugar
- 1 tbsp soy sauce
- Steamed Bok Choy, to serve
Directions
- Heat the sake and mirin in a pan over medium heat. Boil for about 1 minute to burn off the alcohol. Add the miso paste, sugar and soy sauce and whisk until dissolved. Leave to cool.
- Coat the fish in the marinade and place in a container where they fit snugly. Marinate in the fridge for 2-3 days.
- When ready to eat, preheat your broiler. Place the marinated fish filets on a sheet of aluminum foil on a baking sheet.
- Broil for about 10 minutes, rotating the tray as necessary, until the fish is dark golden brown and flakes when gently pressed.
- Serve with steamed bok choy on the side.
Further notes
If you want the main dish to be more filling, add a side dish of simple steamed rice. Japanese sushi rice would be perfect.
