Mediterranean Coho Salmon Salad

Yields: 2 servings

Ingredients

● 2 coho salmon fillets (about 6 oz each)

● 2 cups mixed greens

● 1/2 cup cherry tomatoes

● 1/4 cup green olives

● 1/4 cup cucumber slices

● 2 tbsp thinly sliced red onion

● 1 tbsp olive oil

● 1 lemon wedge

● 1/4 tsp salt

● 1/8 tsp pepper

Instructions:

  1. Pat salmon fillets dry and season both sides with salt and pepper. Preheat a skillet over medium heat.
  2. Add olive oil to the pan and sear the salmon fillets for 3–4 minutes per side until golden brown and cooked through.
  3. While the salmon cooks, prepare the salad: In a large bowl, combine the mixed greens, cherry tomatoes, olives, cucumber, and red onion.
  4. In a small bowl, whisk together the olive oil and lemon juice to create a light dressing. Drizzle it over the salad and toss to combine.
  5. Divide the salad onto two plates and top each with a seared salmon fillet.
