Mediterranean Coho Salmon Salad

Yields: 2 servings
Ingredients
● 2 coho salmon fillets (about 6 oz each)
● 2 cups mixed greens
● 1/2 cup cherry tomatoes
● 1/4 cup green olives
● 1/4 cup cucumber slices
● 2 tbsp thinly sliced red onion
● 1 tbsp olive oil
● 1 lemon wedge
● 1/4 tsp salt
● 1/8 tsp pepper
Instructions:
- Pat salmon fillets dry and season both sides with salt and pepper. Preheat a skillet over medium heat.
- Add olive oil to the pan and sear the salmon fillets for 3–4 minutes per side until golden brown and cooked through.
- While the salmon cooks, prepare the salad: In a large bowl, combine the mixed greens, cherry tomatoes, olives, cucumber, and red onion.
- In a small bowl, whisk together the olive oil and lemon juice to create a light dressing. Drizzle it over the salad and toss to combine.
- Divide the salad onto two plates and top each with a seared salmon fillet.
