Gooseberry Fool

You can make a fruit “fool” by folding any fruit compote with whipped cream and yogurt. It’s a delightfully simple dessert and very refreshing in the summer.
Ingredients
● 1 lb. fresh frozen organic green gooseberries, plus a few extra to garnish
● ¾ cup sugar
● 3 tbsp elderflower wine or cordial
● ½ cup heavy cream
● 1 cup Greek yogurt
Directions
- Place the gooseberries, sugar and elderflower wine in a pan. Bring to a boil over medium heat and cook for about 5 minutes, until the berries are soft and the sugar has dissolved in the juice.
- Blend the gooseberries until smooth.
- Whip the cream until soft peaks form. Fold in the yogurt and blended gooseberries and divide between 6 serving glasses or bowls. Chill for at least 2 hours.
- Top with the extra gooseberries and serve cold.
Further notes
The dessert can easily be made the day before and left in the fridge overnight.
