Gooseberry Fool

Product: Fresh Frozen Organic Green Gooseberries

Special equipment: Electric whisk and blender

 

You can make a fruit “fool” by folding any fruit compote with whipped cream and yogurt. It’s a delightfully simple dessert and very refreshing in the summer.

 

Ingredients

     1 lb. fresh frozen organic green gooseberries, plus a few extra to garnish

     ¾ cup sugar

     3 tbsp elderflower wine or cordial

     ½ cup heavy cream

     1 cup Greek yogurt

 

Directions

  1. Place the gooseberries, sugar and elderflower wine in a pan. Bring to a boil over medium heat and cook for about 5 minutes, until the berries are soft and the sugar has dissolved in the juice.
  2. Blend the gooseberries until smooth.
  3. Whip the cream until soft peaks form. Fold in the yogurt and blended gooseberries and divide between 6 serving glasses or bowls. Chill for at least 2 hours.
  4. Top with the extra gooseberries and serve cold.

 

Further notes

The dessert can easily be made the day before and left in the fridge overnight.
