Cherry Clafoutis

Clafoutis is a classic French dessert which can be made with any fruit. It is like a giant pancake which puffs up in the oven. Cherries are the most common addition, which we’ve used here.

 

Ingredients

     1 lb. pitted fresh frozen organic sweet cherries

     1 ⅓ cups sugar

     6 eggs

     ¾ cup milk

     ¾ cup creme fraiche

     ½ cup flour

     Salt

 

Directions

  1. Preheat the oven to 180°C / 350°F. Grease a 30 cm / 12-inch baking dish.
  2. Place the cherries in the baking dish, spacing them evenly.
  3. In a blender, process the sugar, eggs, milk, creme fraiche and flour with a pinch of salt until smooth.
  4. Pour the batter over the cherries and transfer to the oven.
  5. Bake for 35-40 minutes until golden and slightly springy to the touch. Serve warm, optionally with vanilla ice cream.

 

Further notes

Try making the clafoutis with raspberries, blueberries, or huckleberries in place of the cherries
