Cherry Clafoutis

Clafoutis is a classic French dessert which can be made with any fruit. It is like a giant pancake which puffs up in the oven. Cherries are the most common addition, which we’ve used here.
Ingredients
● 1 lb. pitted fresh frozen organic sweet cherries
● 1 ⅓ cups sugar
● 6 eggs
● ¾ cup milk
● ¾ cup creme fraiche
● ½ cup flour
● Salt
Directions
- Preheat the oven to 180°C / 350°F. Grease a 30 cm / 12-inch baking dish.
- Place the cherries in the baking dish, spacing them evenly.
- In a blender, process the sugar, eggs, milk, creme fraiche and flour with a pinch of salt until smooth.
- Pour the batter over the cherries and transfer to the oven.
- Bake for 35-40 minutes until golden and slightly springy to the touch. Serve warm, optionally with vanilla ice cream.
