Blood Orange Avocado Salmon Salad

Yields: 2 servings
Ingredients
● 2 wild coho salmon fillets
● 2 cups mixed greens
● 1 blood orange, sliced
● 1/2 avocado
● 1 tbsp pine nuts
● 1 tbsp olive oil
● 1/4 tsp salt
● 1/8 tsp pepper
● Lime wedge (for garnish)
Instructions
1. Season salmon with salt and pepper. Grill over medium heat for 3–4 minutes per side, until cooked through and flaky.
2. Arrange mixed greens on serving plates. Top with blood orange slices and avocado.
3. Place salmon over the salad, sprinkle with pine nuts, and drizzle with olive oil. Garnish with a wedge of lime.
