Rhubarb stalks can vary in color from crimson red, to light pink, to a light green. This happens because of the presence of anthocyanins which act as powerful antioxidants. Rhubarbs botanical name is Rheum Palmatum and it belongs to the Polygonaceae family. It is grown in the spring and autumn seasons throughout the world but is especially popular in Europe and North America. Prized for its unique sweet taste, rhubarb goes exceptionally well in desserts or as a sweet ingredient in many entrees.
