Ingredients
¼ cup extra virgin olive oil divided
1lb Northwest wild foods Halibut burger thawed and patted dry with paper towel.
1 cup shredded parmesan cheese
1 egg
¼ cup mayonnaise + a little more to add if mixture is too dry.
1 tablespoon onion powder
1 tablespoon lemon juice + a little more to add if mixture is too dry.
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon dry mustard
1 teaspoon old bay seasoning
¾ cup panko breadcrumbs divided
Directions
In a large mixing bowl combine halibut burger meat with:
Parmesan, egg, mayonnaise, onion powder, lemon juice, 2 tablespoons breadcrumbs, Worcestershire sauce, garlic powder, dry mustard, and old bay seasoning. Gently mix until well combined.
Form 6 -8 cakes and place on parchment paper lined cookie sheet.
Place the formed cakes in refrigerator for 20-30 minutes.
Using the remaining panko breadcrumbs, lightly coat each cake on each side and place back onto cookie sheet.
Heat 2 tablespoons of olive oil in skillet over medium-high heat. Add halibut cakes and cook 4-5 minutes on each side.
Serve with Goldenberry Salsa or Gooseberry/Goldenberry Pico de Gallo
