Mediterranean Cod with Chickpeas and Olives

Ingredients
● 4 x 6oz cod fillets
● 2 tbsp olive oil
● 1 yellow onion, diced
● 2 cloves garlic, minced
● 1 red bell pepper, chopped
● 1 yellow bell pepper, chopped
● 1 zucchini, chopped
● 1 1/2 cups cooked chickpeas (or 1 can, drained and rinsed)
● 1/3 cup pitted black olives
● 1/3 cup golden raisins or chopped dried apricots
● 1/2 cup vegetable or fish broth
● 1 tsp ground cumin
● 1/2 tsp smoked paprika
● 1/4 tsp cinnamon
● 3/4 tsp salt
● 1/4 tsp ground black pepper
● 2 tbsp chopped fresh parsley (for garnish)
Instructions
- Pat cod fillets dry with paper towels and season both sides with 1/4 tsp salt and 1/8 tsp pepper. Set aside.
- In a large skillet or Dutch oven, heat olive oil over medium heat. Add onion and sauté for 3–4 minutes until soft.
- Add garlic, bell peppers, and zucchini. Cook for another 5 minutes, stirring occasionally.
- Stir in chickpeas, olives, raisins, broth, cumin, paprika, cinnamon, remaining salt, and pepper. Simmer uncovered for 8–10 minutes.
- Nestle cod fillets into the chickpea mixture. Cover and cook over medium-low heat for 10–12 minutes or until the cod is opaque and flakes easily with a fork.
- Serve warm, garnished with fresh parsley.
