Mediterranean Cod with Chickpeas and Olives

Yields: 4 servings

Ingredients

     4 x 6oz cod fillets 

     2 tbsp olive oil

     1 yellow onion, diced

     2 cloves garlic, minced

     1 red bell pepper, chopped

     1 yellow bell pepper, chopped

     1 zucchini, chopped

     1 1/2 cups cooked chickpeas (or 1 can, drained and rinsed)

     1/3 cup pitted black olives

     1/3 cup golden raisins or chopped dried apricots

     1/2 cup vegetable or fish broth

     1 tsp ground cumin

     1/2 tsp smoked paprika

     1/4 tsp cinnamon

     3/4 tsp salt

     1/4 tsp ground black pepper

     2 tbsp chopped fresh parsley (for garnish)

Instructions

  1. Pat cod fillets dry with paper towels and season both sides with 1/4 tsp salt and 1/8 tsp pepper. Set aside.
  2. In a large skillet or Dutch oven, heat olive oil over medium heat. Add onion and sauté for 3–4 minutes until soft.
  3. Add garlic, bell peppers, and zucchini. Cook for another 5 minutes, stirring occasionally.
  4. Stir in chickpeas, olives, raisins, broth, cumin, paprika, cinnamon, remaining salt, and pepper. Simmer uncovered for 8–10 minutes.
  5. Nestle cod fillets into the chickpea mixture. Cover and cook over medium-low heat for 10–12 minutes or until the cod is opaque and flakes easily with a fork.
  6. Serve warm, garnished with fresh parsley.
