BROILED SALMON WITH TERIYAKI SAUCE

SEASONED SALMON INGREDIENTS
4 x 6oz wild salmon filets
½ tsp sea salt
½ tsp pepper
½ tsp onion powder
½ tsp paprika (optional)
Dash of cayenne powder (optional)
SAUCE INGREDIENTS
3 tbsp butter
1 tbsp olive oil
7 cloves minced garlic
1 tsp ginger powder
½ cup honey
2 tbsp lemon juice
1 tbsp sriracha sauce
3 tbsp sake
3 tbsp soy sauce
Instructions:
- Position rack to center of oven. Preheat broiler on high.
- Place thawed Salmon skin side down on platter. Pat dry with paper towel. Mix dry ingredients and sprinkle over salmon filets. Let set for 15 minutes at room temperature.
- In a medium size frying pan heat butter and olive oil over med-high heat. Add garlic, ginger, soy sauce, sriracha, honey and lemon juice. Bring to a boil, then add sake. Let mixture cook for 15 seconds then add salmon fillets skin side down. Cook in sauce for 3-4 minutes. Remove from heat.
- Baste fillets with sauce then place them onto a broiler safe baking pan, skin side down. Place in the oven and broil for 3-4 minutes depending on thickness. Continue basting 2-3 times while broiling. Remove from oven and enjoy!
