Baked Bundled Veggie Cod

Looking for a delightfully light and easy to make meal? Try the Baked Bundled Veggie Cod! Ingredients:

- 4 x 6 Ounce Wild Alaskan Cod Fillets
- 1 thinly cut sweet onion
- 1 diced tomato
- 1 thinly cut celery stalk
- 1 tsp minced garlic
- Olive oil
- 1/4 tsp sea salt
- 1/4 tsp pepper
Directions: Heat 5 Tbsp of olive oil in a saucepan to saute sweet onion and celery Add minced garlic and diced tomato to mixture; then cook over low heat for 1 minute Cut and oil 4 large sheets of aluminum foil Sprinkle the fillet with sea salt and pepper Evenly spoon the veggies on to each of the 4 aluminum squares Gently place a filet on top of each of the veggie portions Make sure all foil is tightly closed Bake at 450’F over a wire rack for 5 minutes Transfer bundles on to a cookie sheet and bake 8 minutes more (Or until Halibut Fillet is the ideal temperature of 145’F) Cut top of bundles and serve! Serves 4
