Nova style wild sockeye lox are sustainably caught in the clear, glacial waters of Bristol Bay, Alaska; they are then hand filleted with careful attention given to detail, and only the finest belly meat used. Next, they are placed in a salty artisan brine to cure then carefully cold smoked for a rich, smooth texture and bold, pure flavor that comes only from the finest wild sockeye. The American word ‘lox’ is derived from the German word for salmon which is ‘lachs’. Traditionally, lox has been eaten by numerous countries all throughout Europe, from the Nordic North to Germany and Scotland. Our wild Alaskan sockeye lox is a delicious and healthy treat ready to eat, but we prefer to place ours on top of some cream cheese and crackers with a little tomato and onion.
